Lettuce (Lactuca sativa) is an annual leaf of the daisy family, Asteraceae. It is most often grown as a leaf vegetable, but sometimes for its stem and seeds. Most lettuce varieties are eaten fresh and are commonly served as the base of green salads, although it is also seen in other kinds of food, such as soups, sandwiches and wraps. A particular variety, the celtuce (asparagus lettuce), is grown for its stems, which are eaten either raw or cooked. In addition to its main use as a leafy green, it has also been proven useful for religious and medicinal significance over centuries of human consumption. Lettuce does provide many of the same nutrients as other green vegetables and its low calories make it a popular diet food.



Lettuce belongs to the Asteraceae family, which is known as the aster, daisy, or sunflower family. The Asteraceae is the second largest family in the Division Magnoliophyta, with some 1,100 genera and over 20,000 recognized species. Only the orchid family (Orchidaceae) is larger. There are hundreds of varieties of lettuce (Lactuca sativa), and since they peak at different times of the year, lettuce is produced all year round. There are generally four main groups of cultivars, based on head formation and leaf structure:

  • Head lettuce which can be divided further into butterhead and crisphead (iceberg)
  • Romaine or cos lettuce
  • Stem or asparagus lettuce
  • Leaf lettuce
